Kongu Biriyani/Arisi Paruppu Sadham
This is my go to healthy meal when I have less time to cook. My kids love it and it is easy cum healthy so what else a mom can ask for! This traditional recipe is from kongunadu (Salem/Erode/coimbatore) side. I inherited this dish from my friend and I think about her every single time I make this food.

Serving Size : 2 People
Cooking Time : 20 minutes
Ingredients:
Rice - 1 cup
Toor dal - half a cup
Water - 1:2 ratio
Onion - 1/2 of 1 large onion - Sliced lengthwise
Tomato - Medium sized 1 - Chopped
Green chilly - 1(you can adjust the number based on the spice level of the chilly you use)
Red Chilly - 1
Garlic - 4-5 cloves - Sliced half
Cilantro
Mustard seeds/Cumin Seeds/Hing
Turmeric Powder
Salt
Steps:
1. In a Pressure cooker, add a tbsp of ghee and a tsp of oil.
2. Add Mustard seeds, cumin seeds, 1/2 a tsp of hing, red chilly and curry leaves.
3. Once everything is tempered, add onion and cook until it turns soft. Add garlic cloves, green chilly and tomatoes. Cover and cook for 2 minutes.
4. Add salt and Turmeric powder.
5. Add rice, dal and mix everything well. Add Cilantro as well.
6. Add water - I usually add 3 cups of water for 1 cup of rice and half a cup of dal.
7. Pressure cooker Tips - Cover the pressure cooker and let it start boiling. Once it started boiling, put the weight on and keep it for 3 whistles.
8. Turn off the stove. Once the pressure is released, mix it really well and mash the cooked garlic and rice for added taste.
This tastes really good when you eat hot. Goes well with potato chips and yogurt for kids.
