Palak Paneer

Palak Paneer is my go to recipe when I want my kids to eat greens. This goes very well with jeera rice, roti or naan. Usually I make this for dinner and will keep the left overs for lunch next day with jeera rice.

Ingredients:

Spinach - 1 bunch
Nutmeg - a pinch (optional for flavor)
Ginger Garlic Paste - 1 tbsp
Large Onion - 1/2 Sliced
Tomato - 1medium sized
Garlic - finely chopped - 1tbsp
Green chilly - 2 chopped
Chilly Powder - 1-2tsp(depending on the spice level)
Coriander Powder - 1 tbsp
Cumin Powder - 1tsp
Garam Masala Powder - 1tsp
Turmeric powder - 1/2 tsp
Panner cubes - 2 cups

For Seasoning:

Cinnamon stick - 1 inch
Cumin Seeds - 1 tsp
Cardamom - 2

Steps:

1. Boil spinach with nutmeg. Do not cover the greens while cooking to get the best color.

2. Once cooked, let it cool down. Put cooked spinach into a blender and grind it to a fine paste.

3. In a pan, add oil and all the seasonings. Once everything started to pop up, add the onions and cook until it turns golden brown. Add ginger garlic paste and cook for a minute. Then add chopped green chillies, garlic and fry it for a minute or two. Add tomatoes and cook until it turns mushy.

4. Now it's time to add all powders. Add little water and cook for a minute or two.

5. Add the ground spinach puree, add little water and cook it for 5 minutes. Then add the paneer cubes.

6 . Keep it in medium to low flame for 10 mins. Once the oil starts to separate switch off the flame.

7 . Cream is optional.You can add it at the end if you want. I usually make without cream.

Ready to Serve - Enjoy with roti or rice!
