Cashew Mushroom Masala
Mushrooms are our house's favorite. They are rich in protein and anti-oxidants. So we try to include as much as we can. And i tend to make new dishes every time we make it. And here is one such recipe that's in my top list. Goes very well with roti and jeera rice.
Cooking Time - 30 minutes
Serving size - 2-3 people
Ingredients:
1. White button Mushrooms - 300g
2. Onions finely chopped - 1 Cup
3. Ginger Garlic paste - 1 tbsp
4. Tomato Puree - 1/2 cup
5. Chilly Powder - 2 tsp (Adjust according to your taste)
6. Coriander Powder - 1 Tbsp
7. Garam Masala - 1 tsp
8. Salt as needed
9. Suger - 1/2 tsp
10. Oil - 2 tbsp
11. Peas - 1/2 cup
For Grinding:
Whole Cashew nuts - 15
For Seasoning
1. Cinnamon - 1 inch Stick
2. Cardamom - 4
Steps:
1. In a pan/kadai heat oil and add all the ingredients mentioned under seasoning.
2. Once it started to sputter, add onions and gg paste. Cook until onions become translucent.
3. Add the tomato puree. Give it a mix.
4. Add chilly powder, coriander powder and garam masala. Add 1/4 cup of water. Cover and cook for 2-3 minutes.
5. Add the grounded cashew paste. Masala should be thick at this stage. So add 1/4 cup of water again.
6. Cover and cook for another 5 minutes.
7. Add Mushrooms and green peas. Mix and cook for another 5 minutes.
8. Mushrooms should be cooked by now. Keep it in low to medium flame for another 10 minutes.
9. You will start seeing oil separates. Add 1/2 a tsp of sugar to balance the taste.
Yummy Cashew mushroom is ready!! Serve it with roti or phulkas.
