Thinai Payasam - Foxtail Millet Payasam

This one is my recent favorite. I love sweets but i don't prefer white sugar as it is processed too much. This payasam is a good alternative sweet as it is made out of jaggery. And millets are rich in nutrients. So it's a win win sweet.


Cooking Time - 30 min
Serving Size - 2-3 People

Ingredients:

Foxtail Millet/ Thinai - 3/4  cup
Moong dal - 2 Tbsp
Jaggery - 1 cup
Thick Coconut milk - 1/2 cup
Cardamom powder - 1 tsp
Cashews - 7-8
Raisins - 1 tbsp
Sliced coconut - 1 tbsp
Ghee - 2 Tbsp

Steps :

1. In a pan, dry roast thinai and moong dal for 3-4 minutes until the raw smell goes away.

2. In a pressure cooker, add the roasted thinai and add 2 cups of water. Pressure cook for 3 whistles.

3. In the meantime, heat a pan add jaggery and half a cup of water. Once the jaggery is dissolved switch off the flame. Strain it and keep it aside.

4. Add the jaggery water to the millet and 1/2 a cup of coconut milk and cardamom powder. Mix well and let it boil for 3-4 minutes.

Note: Check the consistency, if you want you can add little water

5. In a small kadai, heat 2 tbsp of oil and roast cashews, raisin and sliced coconut until golden brown.

6. Add the cashews to the payasam. Mix and keep it in low flame for 5 minutes.

Yummy Payasam is ready!!
