Chettinad Chicken Kuruma
This is a unique traditional recipe from Chettinad/Karaikudi side. It tastes delicious with literally anything. I love having it with Thengapal sadham, idly, dosa and parotta. It's quick and easy to make.
Cooking Time : 30 minutes
Serving Size : 2-3 People
Ingredients:
1. Chicken - 500g
2. Large Onion - 1
3. Tomato Medium Size - 1
4.Green Chilly - 4-5(Adjust accordingly)
5. Mint - 2 Tbsp
6. Turmeric Powder - 1/4 tsp
7.Chilly Powder - 1/2 tsp
8. Ginger Garlic paste - 1 tsp(Optional)
For Grinding:
1. Coconut - 1/4 cup
2. Cashews - 5
3. Cumin/Seragam - 1/2 tsp
4. Fennel Seeds/Sombu - 1/2 tsp
5. Couscous/Kasakasa - 1/2 tsp
For Seasoning:
1. Oil - 1 Tbsp
2. Cinnamon - 1inch
3.Bay Leaf - 1
4. Pepper - 1/2 tsp
5. Cardamom - 2
6. Clove/Krambu - 3
7. Star Anise - 1
Steps:
1. In a kadai, heat oil and add all the ingredients mentioned under seasoning.
2. Once it started to sputter, add onions and cook until it become translucent.
3. At this point you can add gg paste. This is optional i did't add it.
4. Add green chillies, mint leaves and tomato. Cook until it turns mushy.
5.Add Chicken and give it a mix. Add 1/2 cup water. Cover and cook for 15 minutes. Chicken should be cooked by now.
6. Grind all the ingredients mentioned under grinding. Add it to the chicken.
7. Add turmeric and chilly powder. Give it a mix and cook for another 5 minutes. Adjust the consistency
8. Keep it in low flame until oil separates.
