Punjabi Chole
In our house we love Channa Masala. So I make it quite often since it has good amount of protein and my kids love it. I usually make it one quick way but this time I wanted to make it different to pair with bhatura. I had little more time so I made it with freshly ground chole masala. It was absolutely delicious.

Serving Size : 2-3 People
Ingredients:
1. Channa/Chick Peas/Garbanzo beans - 1 and half cup or Canned Channa - 2 cans
2. Finely chopped onions - 1 Cup
3. Tomato medium - 1
4. Oil - 1 Tbsp
For Chole Masala Powder:
1. Kashmiri Chilly - 2 (adjust according to your spice level)
2. Coriander seeds - 1 Tbsp
3. Cumin Seeds - 1/2tsp
4. Cinnamon - 1 inch
5. Cardamom - 2
6. Cloves - 3
7. Pepper - 1/2 tsp
8. Amchur powder - 1 tsp
9. Lemon Juice - 1tsp or as needed
Steps:
1. Soak Channa for 8 hours.
2. Remove the soaked water. In a pressure cooker add Channa and 2 cups of water (not the soaked water). Cook until 5-6 whistles.

3. Dry roast all the ingredients mentioned under Chole masala powder. Grind it to a fine powder.
4. In a pressure cooker, heat oil add onions and cook until it become translucent.
5. Add tomatoes and salt. Cook until it turns mushy.
6. Take a handful of Channa and mash it with a mortar or with hands.
7. Mix everything and add the chole masala.
8. Pressure cook for just 1 whistle to get all the flavors in the channa.
9. Once the pressure is released add the lemon juice.
10. Garnish with cilantro and ready to serve with Bhatura/Roti
