Restaurant Style Kadai Chicken

This one is our recent favorite. The flavors of the masala and bell peppers will definitely treat your taste buds. I paired this with roti and the next day leftovers with jeera rice. If you are looking for a variety do try this you will love it.



Cooking Time - 30 Minutes
Serving Size - 2-3 People

Ingredients:

For Marination

1. Chicken - 600g
2. Curd - 1 Tbsp
3. Lemon - 1/2 tsp
4. Salt - as needed
5. Chilly Powder - 1 Tsp

For Kadai Masala Powder

1. Kashmiri Chilly - 2
2. Coriander Seeds - 1/2 tbsp
3. Cumin Seeds/Seragam - 1 Tsp
4. Fennel Seeds/ Sombu - 1 Tsp
5. Pepper/Melagu - 1/2 tsp
6. Cinnamon/Pattai - 1 piece (3/4 inch)
7.Clove/ Krambu - 3-4
8. Cardamom/Elachi - 2

Other Ingredients

1. Medium sized Tomato - 1
2. Ginger Garlic Paste - 1 Tsp
3. Bell Pepper/Capsicum - Largely Diced - 1 Cup
4. Onions - Largely Diced - 1 Cup
5. Coriander Powder - 1 Tsp
6. Cumin Powder - 1/2 tsp
7. Turmeric powder - 1/4 tsp
8. Milk - 1/4 cup
9. Cornflour - 1 Tsp - You can substitute milk and corn flour with cream.
10. Oil/butter - 2 Tbsp
11. Kashmiri Chilly Powder - Optional


Steps:

1. Marinate chicken with all the ingredients mentioned under marination for 15 - 30 minutes.

2. Dry roast and grind all the ingredients mentioned under kadai masala powder. Dry roast in medium heat for 3 minutes.

3. In a kadai, add oil and then ginger garlic paste. Mix it immediately and then let it cook for a minute in medium flame.

4, Add the marinated chicken, mix well cover and cook for 10 -15 minutes.

5. Add the tomatoes and ground kadai masala powder, turmeric powder, coriander powder, cumin powder and salt. Mix everything. Check the spiciness at this point, if you think the spice level is not enough add Kashmiri chilly powder.

6. Cover and cook until the tomatoes turns mushy. Check for salt.

7. Now its time to add the onions and bell peppers. Mix and cook for 3-4 minutes. Check the texture of onions and bell peppers. It has to be little crunchy to get restaurant effect.

8. Mix cornflour and milk. Add it to the curry. You can substitute this with cream as well.

9. Mix and keep it in low flame for 2-3 minutes until oil separates.
