Restaurant Style Veg Kurma
I got this recipe from one of my aunt. She made it for poori when I visited her house. It tasted just like the kuruma we get in restaurants. It is an easy one pot kuruma. Let's get into the recipe.
Cooking Time - 30 Minutes
Serving Size - 2-3 People
Ingredients:
1. Potato - 1 medium sized
2. Carrot - 1 medium sized
3. Beans - 1/2 cup
4. Peas - 1/2 cup
5. Cauliflower - (Optional)
6. Onions - 1 Cup sliced
7. Tomato - 1 Medium sized
8. Bay Leaf - 1
9. Oil - as needed
10. Salt - As needed
11. Turmeric Powder - 1/4 Tsp
For Grinding :
1. Coconut - 1 cup grated
2. Split Dalia/Pottukadalai - 1 Tbsp
3. Cumin seeds/ Seragam - 1tsp
4. Fennel Seeds/sombu - 1tsp
5. Cardamom - 2
6. Cinnamom/Pattai - 3/4 inch
7. Cloves - 2
8. Ginger - 1 piece
9. Garlic - 3
10. Greenchilly - as per your spice level( we are not using chilly powder so add based on that)
Steps:
1. In a Pressure cooker, heat oil and add bay leaves.
2. Add onions and cook until it turns translucent, add salt and turmeric powder.
3. Add tomatoes and cook for a minute.
4. Add the veggies.
5. Grind all the ingredients mentioned under grinding.
6. Add it to the veggies.
7. Add water as needed consistency.
8. Pressure cook for 1 whistle.
9. Once the pressure is released garnish with cilantro.
Serve it with Chapathi or Poori!!
