Chettinad Rava Paniyaram
This is one of the chettinad delicacies that I love the most. It's not too sweet, very light, flavorful and done in no time. One of my favorites from my granny's kitchen. She was in my thoughts all day when I made this. So many nostalgic moments to go with this dish!
Cooking Time : 30 min
Serving Size - 2-3 People
Ingredients:
For Grinding
1. Rava/Sooji - 1 cup
2. Sugar - 1 cup
3. Coconut - 2 Tbsp
4. Cardamom/Elachi - 2-3 powdered
Steps:
1. Soak rava for 30 minutes.
2. In a mixie/blender, add rava (filter and remove the soaked water) and grind it to a fine paste (don't add water at this stage).
3. Add sugar, coconut and cardamom powder. Grind it again.
4. Transfer it to a bowl. You can add water now and adjust the consistency at this stage. (Tip - Batter has to be at dosa batter consistency).
5. Heat oil and pour small ladle full of batter, you will start seeing the paniyaram raising and it will turn light golden brown on the sides. Now turn and cook the other side for few seconds. Paniyaram should be ready by now.
6. Make one by one at a time.
7. Take off the oil from paniyarams with a tissue paper(optional) and store it in a hot pack.
Ready to Serve!!
