Pujabi Aloo ki Sabzi

This happened in my kitchen when i wanted to make something yum with aloo for poori but not regular poori masala. The spicy and tangy flavors from the curry goes very well with poori, roti and even jeera rice. Do try and let me know how it turned out for you guys.



Cooking Time - 30 min
Serving size - 2-3 People

Ingredients:

1. Oil - 1 Tbsp
2. Jeera/ Cumin - 1 tsp
3. Finely chopped onions - 1 Cup
4. Green chillies - 1 chopped
5. Potatoes - 5-6 medium sized
6. Chilly Powder - 1 Tsp(Adjust based on our spice level)
7. Coriander Powder - 2 Tsp
8. Garam Masala - 1Tsp
9. Amchur/Dry Mango powder - 1/2 tsp
10. Kasthuri Methi - A Pinch
11. Water - 1/2 cup

For Grinding:

1. Tomato - 1 medium size chopped
2. Garlic - 2
3. Ginger- 1 small piece 

Steps:

1. Boil Potatoes and peel off its skin and keep aside.

2. In a kadai, heat oil and then add jeera.

3. Add onions, salt and green chilly, cook until it become translucent.

4. Grind all the ingredients mentioned under grinding.

5. And add the tomato puree to the onions. Cook for 2 minutes.

6. Add the boiled potatoes and all masala powders(chilly powder, coriander powder, garam masala and amchur powder)

7. Give it a nice mix. Add water, cover and cook for 5 minutes in medium flame.

8. Add kasthuri methi and keep it in low flame for another 5minutes.

9. Garnish with cilantro and ready to serve!!
