Tamil Brahmin Style VathaKulambu


VathaKulambu is one of the pretty common food in the region of TamilNadu but the way of making it and the taste varies between different communities and regions.

I was bored of eating the same chettinad style that I grew up with so wanted to try the Tamil Brahmin style this time. It came out so good and very easy to make. Let’s jump into the recipe.

Ingredients 

For seasoning

1- Mustard Seeds -1tsp

2- Curry Leaves - 1 string

3- Toor Dhal - 1 tsp

4- Red Chillies - 2

5- Hing - 1/2 tsp

6- Fenugreek - 1/2 tsp

Other Ingredients

7- Tamarind - Lemon size, soak and take the juice out of it

8-Veggies of your choice ( I used pumpkin today,You can use ladies finger, eggplant, drumstick, bitterguard)

8- Jaggery - 1 tsp

9- Rice flour- 1 tbsp.

10- Sambhar Powder - 1 tbsp ( you can substitute this with 1 tbsp of chilly powder as well)

10- Gingelly Oil - Highly recommend this oil to use so that the flavour will be more enhanced.

11- Salt as needed


Steps

1- Heat a pan, add a tbsp of Gingelly oil.Add all the ingredients mentioned under seasoning.

2- Add the vegetable of your choice, add salt and sauté for a minute.

3- Add Sambhar powder and a cup of water, let it boil for 5 minutes.

4- Add Tamarind water and let it boil until the veggies are cooked well. Add salt to taste.

5- Mix rice flour in 1/4 cup of water and add it to the Kulambu Mixture. Let the gravy come to a nice Kulambu consistency and oil will separate.

6- Finally add a tsp of Jaggery to enhance the taste.
