Dindigul Thalappakati Biriyani

This is one Flavour Bomb recipe. I have tried many different styles of Biriyani, this one is one of my Favourite. Let's jump into the recipe.


Ingredients:

For the Masala Paste:

10 cinnamon stick, 2 star anise, 10 cloves , 10 cardamom. Add water and grid to a fine paste.

Steps:

1. In a Pan heat 100 ml oil, 100 ml ghee

2. Add 2 cloves, 1 tsp fennel, 2 cardamom , 2 cinnamon stick.

3. Add sliced 3 onions, 6 green chillies, 10 finely chopped garlic, 3 tsp ginger garlic paste, finely chopped mint leaves, with this you will be adding masala paste, followed by 3 tablespoons curd, 2 tsp salt, 1 kg chicken, finely chopped coriander leaves, 1/4 th cup water to cook the chicken.

If you are using mutton, Pressure cook Mutton with gg paste before and add at this step.

4. After 10 minutes , add 1:1.5 ratio water, I've added 3 cups rice so 4.5 cups water, juice of 1 lemon, add salt if needed, once the gravy boils, add the soaked Seeraga samba rice, close and cook for 10 mins, mix well after 10 mins and cook in dum for 30 mins on a dosa tawa.

5. If you are cooking in Instant pot, Cook it in Low setting for 10 minutes. Wait until the pressure releases on it's own.
